Today I thought I needed to dispel some social erks by doing some good old fashioned baking…yeeeha! So I am making a chocolate cake…but not just any chocolate cake a Flourless French Chocolat Cake…only I did use flour (four tablespoons).

In the air I can smell the aroma of baking chocolate cake mmmmm smmmellll!!!
Less romantic than the smells of the baking cake – is the sound of the stupid ‘convection’ microwave, whirring in harmony with the computer drone.
For some reason microwave ovens were fashionable in the eighties…and the “convection” microwave was the next advancement in contemporary microwave technology!! My home “convection” oven is an example of being fooled by these kind of media tricks! Because one thing is lacking…it doesn’t have a grill!! merde!
So as I was listening to the background sounds of electronic whirs, I got thinking about an experience I had in West Ryde – this is the reason I don’t hang out in West Ryde, or go the local pub – I met this guy that made me ponder about something…although I wasn’t sure why I had to go through the experience of meeting him in order to ponder something. Now although this guy was completely running on his own head trip and ego engine (unlike my rant), he did say something intelligible in all that. He told me that I needed to reconnect with my ancestors. Well I hope I have some French ancestors somewhere, because I want to connect with the gâteau de chocolat.

So now I am thinking about recipes and how recipes have been passed on from one generation to another, perfecting…refining with culinary skill and expertise. Until finally some genius out there thought “I know…I want to make a chocolate cake using a whole bar of dark chocolate!”…and what a fortunate thought indeed, it saved me today.
Most of my culinary skills have been passed down from my mum, although I wasn’t able to collect any recipes because mum didn’t use recipes. A lot of her cooking was improvised…or created from ‘the vibe of the thing’ to quote The Castle (the vibe in the fridge at the time). When you think about it, that is when recipes are created. When people are experimenting with tastes, flavours and combinations. Someone had to be adventurous enough in the kitchen to discover new things, otherwise food would still be bland, like eating boiled cabbage.

The chocolate cake was just as good (if not better) than my favourite cake at the hominy bakery in katoomba. Mmmmmm…
