baking bread

So, the journey has come to an end and here I am back at la fin du monde, trying to adjust to reality. It has been a long haul overseas and to be honest its a bit depressing being back, so to combat any negative feelings I am distracting myself by doing creative things and cooking!
One thing I noticed in Europe was that there was quality bread and it wasn’t so expensive to get it, because it was a kind of standard. Here you have to pay about $7 for good bread and its called “gourmet”.  So I thought, maybe I should try baking bread myself. I hadn’t made bread in a really long time and had to google some recipes to get an idea, but in the end I improvised my own recipe and made a pecan and date fruit bread.

Pecan and Date Fruit Bread

Ingredients:
2 cups of wholemeal self raising flour
1 cup of self raising flour
1 packet dry yeast (you can buy in a box of 5)
1/4 teaspoon of salt
handful of chopped pecans
handful of chopped dates
1 tablespoon powdered cinnamon
1 3/4 cup of water
butter for greasing bread tray

Method:
1. Combine the flour, yeast, salt and cinnamon and mix together in a mixing bowl
2. Add the water to the dry ingredients and mix together so you get a nice dough consistency (add extra flour if it is too sloppy)
3. Add pecans and dates and mix well into the dough mix.
4. Shape the dough into a nice ball
5. Remove dough and place in a clean mixing bowl. Cover the bowl with clingwrap and then cover that with a clean teatowel and place in a cool shaded part of the house for 2 hours
6. Using the butter, grease the bread tray and preheat the oven to about 250ºC
7. Now get the dough and give it a couple of good punches to release the air. You then need to knead the dough a bit, so dust a chopping board with some flour and knead the dough for about half a minute. Once you have finished kneading, flatten the dough out into a rough circle shape, then fold the sides inwards so the dough fits into your greased bread tray.
8. Once the oven is preheated place the bread into the oven at about 220ºC for 30 minutes. As ovens all seem to have there own personality, this is what works best for me. You may have to leave it in for a longer time or a shorter time, so keep checking to see how its going.
9. Once the bread is ready it should have a nice crispy top, so when you tap it its nice and crusty.
Then hopefully voilá! you have Pecan and Date fruit bread.
